Smashed Red Potatoes

Smashed Red PotatoesGarlic makes just about everything better – bacon, pasta, chicken, etc. Well, I was not proven wrong by throwing some garlic on some delicious potatoes and then throwing those bad boys into the oven. I love potatoes, I even went through a faze where I was eating baked potatoes for lunch on the reg. I’m not even sure why I stopped that because I love potatoes SO MUCH. Anyway, I stumbled across this recipe for smashed potatoes. They’re really easy and extremely delicious and crispy.

Smashed Red Potatoes

Serves: 1
Prep Time: 10 minutes        Cook Time: 38-40 minutes

What you need:

  • 4 small red cooking potatoes
  • 1 clove of garlic, minced
  • 1 tablespoon of olive oil
  • generous sprinkling of thyme (about 1/2 tablespoon)
  • salt and pepper to taste

Smashed Red PotatoesDirections:

  • Boil water for the potatoes, make sure the water will cover them
  • Rinse the potatoes and boil until tender, about 20 minutes
  • Preheat oven to 450
  • Mix garlic, olive oil, thyme, salt, and pepper together in a small bowl
  • Place the potatoes on a greased baking sheet
  • Gently smash the potatoes – I used a fork, but a potato masher would work well. You want to press down on the top so that the potato cracks, but is as whole as possible
  • Drizzle the olive oil mixture over the potatoes
  • Bake for 18-20 minutes – you want the potatoes to be crispy on the edges, but not burnt
