Cheesy Upside Down Potatoes

Cheesy Upside Down Potatoes Stop what you’re doing (well, finish reading first) and make the delish dish I have in store for you today. I love potatoes, and I love using up ingredients I already have on hand. Since I usually cook for one, I can make one bag of potatoes or cheese go a long way which means my lovely readers are treated to a lot of different recipes using similar ingredients. YOU’RE WELCOME. These potatoes are very simple and extremely delicious.

Cheesy Upside Down Potatoes

Serves: 1
Prep Time: 2 minutes      Cook Time: 25-27 minutes

What you need:

  • 1 tablespoon unsalted butter, meltedCheesy Upside Down Potatoes
  • 2 tablespoons shredded Parmesan cheese
  • 4 small red cooking potatoes, cut long wise
  • 1 clove of garlic, minced
  • garlic powder, to taste
  • salt, to taste
  • pepper, to taste

Directions:

  • Preheat oven to 400
  • Melt butter in an oven safe dish – you want your potatoes to take up as much room as possible to absorb all the juices. I used a small bowl
  • Place the cheese, minced garlic, and spices on top of the melted butter
  • Cheesy Upside Down PotatoesPlace your potatoes cut side down on top of the mixture
  • Sprinkle more of the spices on top if you wish
  • Bake for about 25 minutes or until the potatoes are tender
  • Let them sit for about 4-5 minutes so the juices really set and the potatoes can cool a bit
  • Try not to lick the baking dish 😉
