Salt and Vinegar Potatoes - Rebekah and her RamblingsHave you ever had salt and vinegar potato chips? They’re a fun flavor that I enjoy. I found some potatoes that have a similar idea and flavor this week! These are very crispy AND I learned a new way to smash potatoes, which is a definite positive. Enjoy!

Salt and Vinegar Potatoes

Serves: 1

Prep Time: 5 minutes         Cook Time: 45 minutes

What you need:

  • 4 small red cooking potatoes
  • 1 tablespoon salt, plus more for taste
  • 1 tablespoon melted unsalted butter
  • 1 tablespoon olive oil
  • 1 tablespoon white vinegar
  • pepper to taste

Directions:

  • Preheat oven to 400
  • Place potatoes in a pot and sprinkle tablespoon of salt over them, cover with water and boil
  • Reduce heat to a high simmer and let potatoes cook for about 20 minutes, or until tender
  • Drain the water from the potatoes and pour the melted butter over them, roll them around to coatSalt and Vinegar Potatoes - Rebekah and her Ramblings
  • Place the potatoes on a baking sheet  lined with parchment paper
  • With a heavy glass, press down on the potatoes so they are smashed
  • Sprinkle will salt and pepper and bake for 15 minutes
  • Flip all of the potatoes over and drizzle the tablespoon of olive oil over them
  • Continue cooking for 10 minutes
  • Drizzle the vinegar over the potatoes and add more salt if desired
