Pasta Carbonara

Pasta Carbonara - Rebekah and her Ramblings. Cheesy pasta dish packed with bacon and eggs!!Today is the kind of day where all sports lovers should be firmly parked in front of a TV with the remote in one hand and a drink in the other. Or a bag of popcorn. Or chocolate. Or basically anything edible. There is Game 7 NBA Basketball, the Kentucky Derby (what a finish!!), soccer (always a fave of mine), baseball, and of course, MayPaq or whatever they’re coining it as when they aren’t referring to it as the fight of the century. Anyway, to settle into this delicious day of sports, I made a plate of pasta carbonara, a staple in my diet. This pasta is packed with cheese, bacon, AND garlic. What else can a girl ask for? The best part? It’s incredibly easy and pretty quick!

Pasta Carbonara

Serves: 1 (but easily doubled, I usually make double)
Prep Time: 10 minutes       Cook Time: 15-20 minutes

Pasta Carbonara - Rebekah and her Ramblings. Cheesy pasta dish packed with bacon and eggs!!What you need:

  • 4 ounces of long pasta, I prefer linguine
  • 1 slice of bacon, chopped (kitchen scissors work great for this!)
  • 2 cloves of garlic, minced
  • 1 egg
  • 6 tablespoons grated Parmesan cheese
  • Italian seasoning or parsley, to taste and garnish

Directions:

  • Cook pasta according to package directions, set aside. When you drain the pasta, SAVE 1/4 CUP OF PASTA WATER
  • Cook bacon in a medium to large sized skillet on medium heat
  • Mix the egg and Parmesan cheese in a bowl with a fork. Mix well
  • Cook the bacon until it is crispy and cooked through
  • Add the garlic and cook until fragrant, about another minute. Reduce the heat to low
  • Add the pasta and cheese mixture to the skillet
  • Gently mix the contents of the pan together, slowly adding small amounts of the pasta water until you get the consistency you like
  • Remove the pasta and top with Italian Seasoning or Parsley
