Sausage Breakfast Casserole - Rebekah and her Ramblings. An incredibly easy  breakfast casserole full of sweet sausage and cheesy goodness!So sorry I haven’t posted a new recipe in a long time, I’ve had a super busy week! I graduated from college on Saturday, had family in town all weekend, got a big girl job on Monday, found my big girl apartment on Tuesday, and celebrated my birthday today! It’s been so crazy busy and hectic, but definitely a week to remember! On Saturday, my graduation was at 2 in the afternoon so we had a family brunch, complete with Welch’s Passion Fruit Juice from concentrate, a discovery of my friend Andrew’s. I made this delicious breakfast casserole and was left with exactly zero leftovers. If that doesn’t mean the recipe was a hit, I don’t know what does.

Sausage Breakfast Casserole

Serves: 8-12 nice sized servings
Prep Time: about 5 minutes       Total Cook Time: about 45 minutes

Sausage Breakfast Casserole - Rebekah and her Ramblings. An incredibly easy  breakfast casserole full of sweet sausage and cheesy goodness!What you need:

  • 1 package of 8 crescent rolls (I used low fat)
  • 1 pound of maple sausage, browned
  • 2 cups of shredded cheddar cheese
  • 6 eggs, beaten

Directions:

  • Preheat oven to 350
  • Brown the sausage until the pink is gone, make sure it is in small bite-sized pieces (you could do this the night before to save time!)
  • Spray a 9 x 13 baking pan with cooking spray
  • Unroll the crescent rolls into the bottom of the pan
  • Spread the sausage over the crescent rolls

  • Sprinkle the cheese in an even layer all over the rest of the casserole
  • Bake for 25-27 minutes or the cheese is brown, but not burnt
