Lemon Chicken - Rebekah and her Ramblings. A zesty and juicy easy chicken dish!I am a big sucker for chicken breast because it is a SUPER LOW calorie dinner and there are a bazillion things you can do with them. It’s science. Or something. I am trying to clean out my fridge in a bad way because I am going to be homeless for a week before I move into my new apartment in Waco that has a bigger kitchen that I can do more awesome things with!! Also, look at this picture – that is ONE chicken breast, butterflied. These things are gigantic! I had a random amount of butter left and had bought some chicken breasts to eat this week and literally happened upon this recipe that needed both! This is a delicious and zesty dish that you can whip up in a flash and enjoy with some of my awesome green beans!

Lemon Chicken

Lemon Chicken - Rebekah and her Ramblings. A zesty and juicy easy chicken dish!Serves: 2-4 (I was really hungry and only ate it with 1 side so I ate it over 2 meals)
Prep Time: about 5 minutes          Cook Time: 15-20 minutes

What you need:

  • 2 large chicken breasts, butterflied (cut and split to reduce thickness) (you can either separate the butterflied halves or keep them attached which is what I did)
  • Lawry’s seasoning salt, to taste
  • 1/3 cup flour
  • zest of 1 large lemon
  • 3/4 teaspoon black pepper
  • 1 teaspoon salt
  • 1/4 teaspoon garlic salt
  • 1/4 cup unsalted butter
  • 1 lemon sliced, you can use the “zested” one

Directions:

  • After you butterfly and pound your chicken, season them generously with the Lawry’sLemon Chicken - Rebekah and her Ramblings. A zesty and juicy easy chicken dish!
  • Combine the chicken and flour in a large bag, toss to coat
  • Combine lemon zest, garlic salt, salt, and pepper together in a dish big enough to coat the chicken
  • Dip one side of each chicken breast into the seasoning mixture and let them rest while you melt the butter in a skillet large enough for all of the chicken
  • Once the butter is melted, place the zested side of the chicken down into the mixture. Add the zest mixture to the facing up side of the chicken
  • Cook for about 5 minutes before flipping the chicken
  • Cook until the chicken is almost done and then remove to a plate

  • You can either remove the slices or leave them in while you return the chicken to the skillet to finish cooking
  • Remove chicken and top with lemon slices, you can eat them if you want, but I didn’t like the flavor much
