Penne Pasta Bake - Rebekah and her Ramblings. An easy pasta bake loaded with bell peppers and creamy Alfredo!So I made this recipe before I moved, plus I’ve been making a ton of recipes lately, but I am all out of sorts with posting. This recipe I have for you today is so creamy and incredibly easy and delicious! What is it about red peppers that not only make a dish delicious, but make it so much prettier?? If I could add red peppers to everything, I think I would! You are going to want to cancel your fancy Friday dinner plans and make this instead. There is just something delicious about red bell peppers that are really hard to beat. Plus, if you use your gluten free pasta, you got a gluten free dish!

Penne Pasta Bake

Penne Pasta Bake - Rebekah and her Ramblings. An easy pasta bake loaded with bell peppers and creamy Alfredo!Serves: 2
Prep Time:  about 10 minutes       Total Cook Time: 30 minutes

What you need:

  • 8 oz of uncooked penne pasta (gluten free, if desired!)
  • 15 oz jar of alfredo sauce (I used low fat)
  • 1/4 teaspoon each of garlic salt and pepper
  • pinch of salt
  • 3 tablespoons of Parmesan cheese, grated
  • 1 red bell pepper, chopped

Directions:

  • Preheat the oven to 400 and boil salted water for the pasta
  • Cook the pasta until al dente
  • Penne Pasta Bake - Rebekah and her Ramblings. An easy pasta bake loaded with bell peppers and creamy Alfredo!Mix the alfredo and seasonings in a large bowl. Add 2 tablespoons of Parmesan cheese. Add the drained pasta noodles and pepper and mix well
  • Coat a small baking dish (9 x 7 or 8 x 8) with cooking spray and add the pasta mixture
  • Top with remaining Parmesan cheese, adding more if you desire
  • Bake for 20 minutes or until it’s bubbly, but slightly brown on top
  • DEVOUR THIS BAD BOY
