Zoodle Salad with Hummus Vinaigrette  - Rebekah and her Ramblings. A light salad packed with fresh vegetables and zucchini noodles!I got a vegetable spiralizer for my birthday and have been so excited to try it out! Zucchini noodles seem awesome to me and not having to break my back shredding them with an old cheese shredder was extremely appealing. I found this salad that ALSO let me use my food processor to whip up some easy and delicious homemade hummus. I ate this salad as a main dish – it’s super healthy and light, cool and refreshing, perfect for summer! It is gluten free AND I invented a new word – zoodle (zucchini noodle obviously!)

Zoodle Salad with Hummus Vinaigrette

Serves: 1       Total Time: 15 minutes

Zoodle Salad with Hummus Vinaigrette  - Rebekah and her Ramblings. A light salad packed with fresh vegetables and zucchini noodles!What you need:

  • 1 zucchini, cut into noodles
  • 1/3 red bell pepper, chopped
  • 2/3 cup cherry tomatoes, halved
  • 1/4 cup homemade humms (recipe here)
  • 1 tablespoon red wine vinaigrette
  • salt and pepper, to taste

Directions:

  • Combine zucchini, tomatoes, and peppers on a plate
  • Place hummus and vinaigrette on top and mix until fully combined
  • Add salt and pepper to taste, it gives it that nice wrap up flavor
