It’s kinda weird because it’s so hot and nature is basically dead, but I think goes back to when I was in school. Every August, I started a new grade, but most importantly, football season was right around the corner. Before the start of every season, there is a sense of excitement and newness and a glimmer of hope that this could be your team’s year. I tell you all of this because I walked out of my apartment this morning and it smelled like football season. CRAZY LADY ALERT, I know, but football season has a distinct feel to it.It got me so excited for life. YAY FOOTBALL. You know what else gets me excited for life? Bacon. Chicken. Chicken wrapped in bacon. This recipe checks all of those boxes and gives you an amazing spice blend with brown sugar and chili powder! Make these PRONTO. (gluten free!!)

Bacon Wrapped Chicken

Prep Time: 12 minutes             Cook Time: 20-25 minutes

What you need:

  • one large chicken breast, cut into medium sized chunks (you can see my size chicken in the pic, that was my biggest piece)Bacon Wrapped Chicken - Rebekah and her Ramblings. Bacon wrapped in chicken, packed with brown sugar and chili powder, a combination you don't want to miss!
  • bacon (I used about 5 pieces)
  • 2 teaspoons chili powder
  • 1/3 cup (or so) of brown sugar

  • Preheat oven to 375, spray a small pan (8×8, 7×9, etc) with foil
  • Combine chili powder and brown sugar in a small bowl, stir to combine evenly
  • Take a piece of chicken and starting on one end of the bacon, roll the chicken into the bacon until it is covered. Using kitchen scissors (invest in some!), cut the bacon
  • Roll the chicken bacon combo in the spice mixture, Get it nice and covered
  • Place the chicken with the bacon seam down into the pan
  • Repeat until all of the chicken is done
  • Bake for 15 minutes, turning the chicken halfway through
  • Broil your chicken for an additional 2 minutes. If it needs to be cooked for longer, flip the chicken over and broil for another 2 minutes

The cooking time is going to depend on your chicken and bacon, just keep a close watch on it.
