Sausage Hash - Rebekah and her Ramblings. Easy dinner full of sausage and potatoes, seasoned to perfection!Have you guys ever heard of hash? It’s a relatively new concept to me, but I think it’s kind of like a one pot meal – a bunch of different foods coming together to make one super tasty and satisfying dish. The hash I have for you today is packed with potatoes, onions, and breakfast sausage – happiness on a plate! GLUTEN FREEEEE 🙂

Sausage Hash

Sausage Hash - Rebekah and her Ramblings. Easy dinner full of sausage and potatoes, seasoned to perfection!Serves: 2
Prep Time: 5 minutes                   Cook Time: 30 minutes

What you need:

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 1 large potato, chopped into bite sized pieces (heaping 3/4 cup or so)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic salt
  • 1/2 pound ground breakfast sausage
  • 1/4 cup shredded cheese (I used Mexican Blend or Cheddar)
  • teaspoon of parsley, for garnish

  • Heat the olive oil over medium heat in a large skillet
  • Once the onion is hot, add the onion and cook for about 3 minutes
  • Add the potato, salt, pepper, and garlic salt and stir well
  • Cook for about 10 minutes or the potatoes and onions are softer and browning
  • Add the sausage and let sit for about 3 minutes or the outside of the sausage is browned
  • Break the sausage down into bite sized pieces and keep cooking, stirring every so often
  • Once the sausage is cooked through, remove from the heat and top with cheese ad parsley
