I don’t eat a lot of snacks in general, but when i do, popcorn (or tortilla chips…) are my go to. I make a really really delicious caramel corn, but I wasn’t feeling that this week, so I decided to make some kettle corn. This stuff is addicting, I made two batches in two days and have almost finished it by myself. It’s sweet, but it feels kind of light. Make this to enjoy the rest of the football games today or tomorrow or just life in general. Because life deserves kettle corn. Plus it’s gluten free and only requires three ingredients whatttt

Addicting Kettle Corn

Yield: 12-13 cups popped kernels
Total Time: 10 minutes

Addicting Kettle Corn - Rebekah and her Ramblings. An easy and addicting snack in your stomach in just 10 minutes!!What you need:

  • 1/2 cup vegetable oil
  • 1/4 cup granulated sugar plus 1 tablespoon
  • 1/2 cup unpopped popcorn kernels

Directions:

  • Prepare all of your ingredients so you can work quickly
  • In a large pot, heat the oil over medium heat. You want the oil to cover the bottom of the pot in a thin layer.
  • Once the oil starts to pop just a little (after about 1-2 minutes), sprinkle 1/2 cup sugar and quickly stir
  • Add the kernels and cover
  • Gently move the pot back and forth over the heat until the kernels begin to pop – this may take up to 5 minutes, but keep moving the pot very gently
  • Once the kernels stop popping, remove the pot from the heat and let it sit for about 1 minute
  • Transfer the popcorn to a large bowl and add 1 tablespoon of sugar. Gently toss or stir to mix
  • DEVOUR THIS BAD BOY
