Simple and scrumptious homemade guacamole that is meant for a small crowd (or just you!)If you can eat guacamole and not be happy, you are probably not human. Or my dad. He thinks avocados are weird. But I know he’s weird. How can you not love the delicious, creamy, incredible green stuff? I have a recipe for a small batch of it that you can gobble up easily in one sitting and not be tempted to eat your weights worth of it – because guacamole tempts me to do strange things. One time, in college, my roommate, Hannah, was making guacamole. The avocados weren’t quite ripe enough yet so my friend Nathan and I were trying so many things to  mash up the avocados. We even put them in a bag and stomped on them – true story. The stuff ended up being like a chunky avocado salsa which was pretty good. Anyway, guacamole OR chunky avocado salsa, this recipe is incredible on tortilla chips, burgers, salmon, a spoon… Enjoy this super food recipe that also happens to be gluten free 🙂 Also note that you can omit or add quantity based on your flavor preference, that’s why cooking is so great!

Small Batch Guacamole

Serves: 1-2                 Total Time: 5-7 minutes

Small Batch Guacamole - Rebekah and her Ramblings. Simple and scrumptious homemade guacamole that is meant for a small crowd (or just you!)What you need:

  • 1 large ripe avocado
  • 1 tablespoon chopped tomato
  • 1 tablespoon chopped red onion
  • 2 teaspoons chopped cilantro
  • 1 tablespoon lime juice (fresh or bottled)
  • 1/4 teaspoon garlic salt
  • small pinch pepper (maybe 1/8 teaspoon or so)

Directions:

  • Cut the avocado in half and scoop it into a bowl
  • Add the rest of the ingredients and loosely stir
  • Using a potato masher, mash all of the ingredients gently until the avocado is a smooth, creamy consistency
  • Stir everything together well until completely combined
  • Taste and add more garlic salt or lime juice if you think you need it – those are the flavors I would generally advise adding

I literally made this recipe up because I’m amazing – not adapted 🙂
