Ultimate Grilled Cheese

Ultimate Grilled Cheese - Rebekah and her Ramblings. Probably the best grilled cheese around - loaded with avocado and bacon jam!!Grilled cheese brings out my inner child. I don’t even think I ate it that much when I was young, but it was a staple of my diet in college until I had to cut way back on gluten. How can you not like something that is full of butter and melty cheese? If you love the old grilled cheese though, you’re going to (probably) die of happiness when you try this one out! It is full of three of my favorite things – cheese, avocado, and toasty bread. Serve this up with this great weather and you’re looking at a pretty perfect day!!

Ultimate Grilled Cheese

Serves: 1
Prep Time: 5 minutes                Cook Time: 7 minutes

Ultimate Grilled Cheese - Rebekah and her Ramblings. Probably the best grilled cheese around - loaded with avocado and bacon jam!!What you need:

  • 1 teaspoon Olive Oil, divided
  • 2 pieces of fresh bread (I used Asiago cheese that I got for FREE)
  • 1 heaping tablespoon Bacon Jam
  • 2 slices of sharp cheddar cheese
  • 1 avocado
  • 1/3 roma tomato, sliced

Directions:

  • Spread 1/2 teaspoon of olive oil on 1 side of each slice of bread
  • On the other side of the bread, spread the bacon jam (on both pieces of bread)
  • Place a slice of cheese on each slice of bread
  • Spread the avocado, either sliced or very gently mashed on one slice of bread
  • Place the tomato on the other slice of bread and put your sandwich together
  • Cook over medium heat in a skillet until done – flip after about 3 or 4 minutes or the bread is golden brown
