The cookies I have for you today are minty and packed with loads of delicious things like chocolate and oreos. And mint pieces. And peppermint extract. Salivating yet? These cookies are so soft, even the next day (if any survive that long). Plus there’s something super refreshing about mint. These are totally fool proof so be sure to whip them up for your next party!

Chunky Mint Oreo Cookies

Prep Time: 1 hour                Cook Time: 9 minutes

What you need:

  • 1 15.25 oz box white cake mix
  • 8 tablespoons (1 stick) unsalted butter, melted
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract (you won’t regret investing!)
  • 4 oz cream cheese, softened (I used fat free)
  • 1 cup (about 8 whole) oreos, chopped into chunks – I pulsed them in my food processor until broken down, but still chunky
  • 1 cup Andes mint pieces (I used the green Creme de Minthe ones)
  • 1/2 heaping cup dark chocolate chips (I used the large morsel chips!!)

  • In a large bowl, mix the cake mix, butter, egg, vanilla extract, and peppermint extract together with your hand mixer until well combined and doughy
  • Add the cream cheese and continue mixing
  • Stir the oreo chunks and mint pieces in. Make sure you stir well to get the whole dough covered in the chocolate. Once fully combined, stir the chocolate chips
  • Refrigerate the dough for 45 minutes – DON’T SKIP THIS STEP (cough, mom). Refrigerating the dough helps bring the butter flavor into the dough and helps the flavors combine and thicken up
  • Preheat the oven to 350* and line a cookie sheet with parchment paper
  • Using a tablespoon scoop, form the dough into mounds (so they are taller than they are wide) and bake for 9 minutes
  • Let the cookies sit on the cookie sheet outside the oven for 3 minutes before removing to another piece of parchment paper to cool completely
