Oreo Blondies

I’m so sorry I haven’t posted in a long time – I was internet-less (AGAIN) and then away for 2 weeks without a computer! I made so many great recipes in this time frame and can’t wait to share them with you guys this week! Let’s start with some oreo blondies -a dessert loaded with oreos and white chocolate chips. This is perfect for anyone with a sweet tooth, but bad for diets – cheat day anyone??

Oreo Blondies

Yield: 9-12 bars
Prep Time: 20 minutes               Bake Time: about 25 minutes

Oreo Blondies - Rebekah and her Ramblings. Deliciously soft blondie with a surprise in the middle!What you need:

  • 1.5+1/3 cups white chocolate chips, divided
  • 1 stick (1/2 cup) unsalted butter
  • 2 eggs
  • 1/3 cup sugar
  • 1 teaspoon vanilla
  • 1.25 cup flour
  • 1 teaspoon salt
  • 12-20 double stuff oreos
  • 1/2 teaspoon vegetable (or canola or coconut) oil

  • Preheat the oven to 350* and spray a small baking dish with cooking spray. I used a 7X9 pan, but an 8×8 or something similar would work as well
  • Combine butter and 1.5 cups of white chocolate chips in a microwave safe bowl and cook in :20 intervals, stirring in between each time
  • Beat eggs with your hand mixer in a large bowl until they’re kinda foamy, add the sugar and vanilla and mix until well combined
  • Slowly add the melted butter mixture to the sugar mixture and continue mixing until well combined
  • Fold the flour into the dough, and then add the salt. Continue to mix until the dough is thoroughly combined
  • Pour the batter into the dish and smooth the top
  • Place your oreo cookies across the dough, chocolate side down, until the dough has a solid layer (I used 14 cookies because of the shape of my pan)
  • Gently push the cookies down into the batter and smooth the batter over the cookies until you can only see the white of the dough
  • Bake for 18-21 minutes and cool completely
  • Once the brownies are cool, melt the remaining 1/3 cup of chips with the oil in :15 intervals, stirring each time until completely melted
  • Drizzle the chocolate over the blondies and allow the chocolate to cool
