One Pot Chicken Sausage Pasta - Rebekah and her Ramblings. A delicious one pot meal packed with healthy veggies!Everyone knows I love a one pot meal! How can you dislike something where you just throw everything into 1 pot, eat, and then clean ONE POT. I am all about simple and delicious and this meal is both things in spades. And it’s full of veggies (healthy!) and is gluten free (of course!!).

One Pot Chicken Sausage Pasta

One Pot Chicken Sausage Pasta - Rebekah and her Ramblings. A delicious one pot meal packed with healthy veggies!Serves: 2-4
Prep Time: 10 minutes          Cook Time: about 25 minutes

What you need:

  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 1/2 zucchini, sliced and then halved
  • 2/3 large onion, chopped
  • 6 oz. your favorite mushroom, sliced
  • 3 chicken sausages – either crumbled with casings removed, or the other kind that you can chop up
  • 1.5 cups lasagna corte or another small type pasta (original recipe uses orzo, but I wanted a gluten free option)
  • 2 cups chicken broth
  • 7 oz. diced tomatoes, drained
  • 1 tablespoon heavy cream
  • salt and pepper, to taste
  • 1/4 cup shredded mozzarella cheese (or your favorite Italian type cheese)


  • In a large skillet, heat the olive oil and minced garlic and cook for about 1 minute on medium heat or until very fragrant
  • Add the zucchini, onion, and chicken sausage (if using the crumbled kind) and cook for about 5 minutes or the veggies start to soften and sausage starts to brown
  • Add the mushrooms and chicken sausage if it’s not the crumbled kind. Continue to cook for about 2 minutes or the mushrooms start to reduce in size
  • Add the pasta and chicken broth
  • Turn the heat up until the broth boils, then reduce the heat to a simmer and cover until the sausage is cooked through and the pasta is cooked as well
  • Stir in the tomatoes and heavy cream and season with salt and pepper
  • If you want a thicker kind of stew and you haven’t reached your desired consistency, cook for 7 or so more minutes. Gluten free pasta is not as starchy as normal pasta so you may have to cook a little bit longer to make it creamy if you go this route – it’s worth it, I promise!
  • Remove from heat, top with cheese, and serve
