Sweet Potato Turkey Burgers

Sweet Potato Turkey Burger - Rebekah and her Ramblings. A quick, gluten free, HEALTHY dinner! We all know that I am a sucker for red meat, I have been very open about my love of that stuff from the beginning with you guys. I love a good burger and have never tried a turkey burger – why mess with a good thing? However, H-E-B had ground turkey on sale last week and I was messing around on Pinterest looking for various turkey recipes I had saved and found these sweet potato turkey burgers! BOOM. Super healthy and gluten free. And when I mean healthy, I mean this entire meal (with sides AND ice cream) comes in way under 600 calories. 600!!! WITH ICE CREAM – guys, game changer. I didn’t eat a bun because bread (obvs), but I tossed up two healthy sides (1 cup of fruit and some sauteed zucchini) and was more than satisfied. You will not miss the red meat and you will definitely not miss the calories. And it’s on the table in WAY under 30 minutes. GUYS THE PICTURES WON’T LOAD!!! Promise I will work on it tomorrow AHH

Serves: 2
Prep Time: 10 minutes                   Cook Time: 10 minutes

What you need:

  • 1/2 pound ground turkey
  • 3/4 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground pepper
  • Italian seasoning, to taste
  • 2 handfuls cilantro (I literally just pulled the leaves off the stems)
  • 1.25 cups shredded sweet potato (about 1/2 large sweet potato) – use a food processor to make your life super easy!
  • 2 teaspoons olive oil
  • 2 tablespoons water
  • 2 tablespoons shredded cheese, for serving (optional)

  • In a large dish, season the turkey with the chili powder, salt, pepper, and Italian seasoning
  • With your hands, gently mix the turkey so the seasonings are absorbed. Add the sweet potato and cilantro and continue to fold the meat until the ingredients are well combined.
  • Form the meat into a nice rectangle and split it in half to make equal sized patties
  • In a large skillet, heat the olive oil (1 teaspoon per patty) over medium heat
  • Add the patties once the oil is hot and cook for about 1 minute
  • Flip the patties over and cook for an additional 2 minutes or the pink on the outside is mostly gone
  • Flip the patties over
  • With the skillet lid in one hand and 1 tablespoon per patty of water in the other, add the water and cover
  • Reduce the heat to medium low and steam for about 5 minutes. You will know the patties are done by looking at them (I promise)
  • Add cheese to the patties, if desired, and cover while the cheese melts
  • Remove from heat and enjoy
