How can you hate a holiday centered around CHOCOLATE?!?! And chocolate covered strawberries??? And NOW, chocolate covered strawberry flavored chocolate cookies! Because if you can’t be happy with those kind of things in your life, ain’t no man gonna bring you happiness, isn’t that what mama always said?  I made these cookies for work/myself and a coworker on a diet got mad at me because she “had to eat more than one.” Hey, it is not my fault that I make magical cookies. And these things are magical – I’m used to my baking getting compliments (#humblebrag), but the number of compliments for these bad boys was high, even for me. #swag

Yield: about 3 dozen cookies
Prep Time: 10 minutes                Cook Time: 10-12 minutes

What you need:

  • 1 18.25 box dry strawberry cake mix
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1/4 cup flour
  • 3/4 cup chocolate chips (I used milk chocolate for a little extra sweetness)
  • 4-6 oz. chocolate coating


  • Preheat the oven to 350* and line a cookie sheet with parchment paper
  • Combine the cake mix, eggs, oil, and flour in a large bowl and mix with your hand mixer until thoroughly combined
  • Add the chocolate chips and stir to combine, use your hands to really mix the chips in if you need to
  • Using a tablespoon of dough, scoop the cookie onto the cookie sheet and form it into a mound (taller than wide)
  • Bake for 10-12 minutes (I did 10 exactly)
  • Remove cookies from the oven and let them sit for 3-5 minutes before removing to a cooling rack
  • Allow the cookies to cool completely
  • Melt the chocolate coating per package directions, you want it to be very melty
  • Drizzle the chocolate over the cookies and allow to harden completely before serving
