A delicious tortilla bake loaded with flavor!It’s 75 outside right now.  I’ve been driving around everywhere with the sun roof open and the windows down. I’ve been blessed to spend that last 2 days outside in the gorgeous weather for work. This weather is patio sitting, margarita sippin’, guacamole chowinggg kind of weather.  I made small-batch guac a couple times this past week, and enjoyed it with this tasty new recipe I have for you today!  I left things with texture and full of flavor – this recipe has that in spades.  Make it soon, with a marg or two, and revel in the happiness in your belly. Ground Beef Tortilla Bake
Serves: 2                             Total Cook Time:  40 minutes

Ground Beef Tortilla Bake - Rebekah and her Ramblings. A delicious tortilla bake loaded with flavor!What you need:

  • 1/2 ground beef (or turkey) – I used 96% lean
  • 1 yellow onion, chopped
  • cumin and pepper to taste
  • 1 teaspoon water
  • 1 small can (I forget, but think it was 8 oz’s or so) condensed tomato soup
  • 1/2 cup of your favorite chunky salsa
  • 1/4 cup milk – I used 2%
  • 6 corn tortillas, cut into about 1 inch bite sized pieces
  • 1/2 cup shredded cheese, divided – I used 2% milk colby jack

Directions:

  • Preheat oven to 400* and spray a small baking dish (I used a 6″ bowl) with cooking spray
  • Place meat and onion in a large skillet and season with cumin and pepper
  • Brown the meat on the outside and then add 1 tablespoon of water, continue cooking until meat is cooked through and onions are soft
  • Add tomato soup, salsa, milk, tortilla strips, and 1/4 cup of cheese to skillet, stir well
  • Pour the skillet mixture into the baking dish and cook for 25-30 minutes, or everything is bubbly
  • Top with remaining 1/4 cup of cheese and serve
