On top of crazy busy-ness at work, my favorite soccer team has decided that they don’t want to be good at soccer anymore and it makes me sad. When Arsenal makes me sad, which seems to be permanent these days, I look to take my mind off of things.  Baking is one of the best way to take my mind off of things and chocolate ALWAYS does the trick.  Because I like to at least pretend to be healthy, I made these brownies for two so I could have a delicious homemade dessert for just 2 days.  These are insanely chocoately and tasty.  Make next time your favorite team makes you sad, although nobody can make you sadder than Arsenal #truth

Brownies for Two
Serves: 2
Prep Time: 5 minutes               Cook Time: 18-22 minutes

Brownies for Two - Rebekah and her Ramblings. A chocolatey treat that doesn't leave you with tons of tempting leftovers!What you need:

  • 1/2 cup (4 tbs) unsalted butter
  • 1/2 oz unsweetened baker’s chocolate
  • 1/2 cup milk chocolate chips
  • 1 egg
  • 1/3 cup sugar
  • pinch salt
  • 1/2 teaspoon vanilla extract
  • 1/4 flour

Directions:

  • Preheat oven to 350* and spray 2 medium ramekins (about 6 oz) with cooking spray if not non-stick
  • Melt butter, baker’s chocolate, and chocolate chips in a microwave safe bowl until smoth – mine took about 1 minute, but I would start with 45 seconds
  • In a medium bowl, combine the egg and sugar and whisk until well combined
  • Add the melted chocolate, salt, vanilla extract, and flour to the egg mixture and whisk until fully combined
  • Divide the batter into the ramekins and bake for 18-22 minutes, or a toothpick comes out clean
  • Allow brownies to sit for at least 10 minutes out of the oven before eating
