One Pan Balsamic Chicken Dinner

One Pan Balsamic Chicken Dinner - Rebekah and her Ramblings. A flavorful chicken dish where the main course and sides are made all in one pan!SO SORRY I haven’t been good at posting lately, I’ve really gotten out of a routine from working so much.  I promise that every recipe I brings you though is worth the wait. This dish today is chicken and veggies cooked in a delicious sauce and ready all in one pan.  It is ready in way less than 30 minutes which is what really makes it perfect for a busy weeknight when you want to cook, but don’t want to spend all night in the kitchen.  Make tonight and thank me later.  Gluten free :)

One Pan Balsamic Chicken Dinner
Serves: 2
Prep Time:  5 minutes      Cooking Time: 20-25 minutes

What you need:

  • 1 tablespoon olive oil
  • 2 large chicken breasts, cut into strips
  • Lawry’s seasoning salt, to taste
  • 1/4 cup plus 2 tablespoons Italian dressing (I used lite)
  • 3 tablespoons balsamic vinegar
  • 1 1/2 tablespoon honey
  • 1 glove garlic, minced
  • 1 pound fresh green beans, ends removed and cut in half
  • 1 package (about 1.5 cups) cherry or grape tomatoes (I left them whole)

Directions:

  • Heat olive oil in a large skillet over medium heat, season the chicken with lawry’s seasoning salt (seriously, if you don’t keep this stuff in your pantry, what are you doing?)
  • Add the chicken to the skillet and cook on each side until the chicken is cooked through
  • While the chicken is cooking, whisk the Italian dressing,  balsamic vinegar, honey, and garlic together in a small bowl (you can also prepare the green beans while the chicken is cooking)
  • Pour half of the balsamic mixture to the skillet and gently shake the pan to make sure the chicken is covered
  • Remove the chicken (with tongs or a spatula) to a plate and add the green beans to the skillet with the balsamic mixture.  Cook for about 5 minutes or until the green beans begin to soften, add the tomatoes
  • Once the green beans and tomatoes are tender, add the chicken back the skillet and top with the remaining balsamic mixture.  Toss gently before serving
