Cupcakes for Two

Cupcakes for Two - Rebekah and her Ramblings.  A very vanilla cupcake recipe that makes just two cupcakes!I have another delicious dessert recipe that makes a small batch: two cupcakes! PERFECTION.  Plus these bad boys are packed with flavor and fluffy that you may end up doubling the recipe so you can have 2 for yourself and 2 to share.  I used some leftover caramel buttercream to frost these beauties, recipe here.  I think any frosting would be good with these honestly, the flavor is very vanilla so however you like to dress up vanilla would be appropriate.  And I honestly think I could have eaten these without any frosting just because the cake flavor is so good by itself.

Prep Time: 10 minutes              Cook Time: 9-12 minutes

What you need:

  • 1 egg white
  • 2 tablespoons granulated sugar
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 cup flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1.5 tablespoons (or about 4.5 teaspoons) milk – I used 2%

Directions:

  • Preheat oven to 350*, line a cupcake pan with 2 liners
  • Combine the egg white and sugar into a bowl and whisk until fully combined
  • Add the butter and vanilla and whisk well
  • Add flour, baking powder, and salt to the bowl and mix until fully combined
  • Stir in the milk and then divide the batter evenly between the 2 liners
  • Bake for 9-12 minutes or the cupcakes are set in the middle – mine took right at 12 minutes
  • Allow the cupcakes to cool before frosting
