Cookie Butter No Bakes - Rebekah and her Ramblings. A ridiculously easy no bake cookie made with addicting cookie butter!Okay – don’t judge the pictures!! I totally forgot to take pictures of these cookies until I was packing them up and it was 11:30 and my 5:30 alarm was calling so I didn’t unpack to try and take better pictures.  However, regardless of the pictures, the cookies I have for you tonight are TO DIE FOR.  Cookie butter  is God’s gift to mankind (probably).  Chocolate is what makes the world go ’round (definitely).  Sugar and oatmeal make my tummy very happy (really).  These cookies have all of these things and are almost like eating cookie dough.  And if you don’t like cookie dough, you have a problem.  So go pick up some cookie butter (if you don’t already have a massive stock in your pantry like I do) and whip these things up – it’s not my fault if you eat the whole batch!

Yield: about 3 dozen      Total Time: about 1 hour

What you need:

  • 4 tablespoons unsalted butter
  • 1 cup sugar
  • 1/2 cup heavy cream
  • 1/2 cup cookie butter (I used H-E-B Speculoos)
  • 1.5 cups quick oats
  • 1 cup chocolate chips (I used dark chocolate)

Directions:

  • In a medium soup pot, combine the sugar, butter, and heavy cream; melt over medium hear, stirring regularly
  • Let the mixture come to a boil and continue to boil for about 2 minutes; remove from heat
  • Stir the cookie butter into the pot and continue to stir until smooth and combined
  • Stir the oats into the pot and stir very well until all of the oats are incorporated
  • Add the chocolate chips and stir a few times – it’s okay if the chocolate is still chunky
  • Using a tablespoon or cookie scoop or melon baller, scoop the mixture onto a piece of parchment paper
  • Allow the cookies to set up (takes 30-45 minutes) and cool before enjoying
