Ground Beef Rice Casserole - Rebekah and her Ramblings. A hearty and scrumptious weeknight casserole!

I love living in Houston and hanging out in the sun – fortunately we have a lot of sun in H-Town.  The only bad thing about it heating up again (and it REALLY is – been 90 all week) is that baking with heat makes my apartment even hotter.  I will never be able to survive and entire summer on heatless dishes and the recipe I have for you tonight is well worth the sweat accumulated when it’s 103 degrees with 95% humidity.  It’s gluten free and you can easily cook the rice ahead of time on the weekend or while you’re watching the game to save time when it’s time to whip this bad boy up.  Just remember, always cook your rice in broth 🙂

Ground Beef Rice Casserole
Serves: 2
Prep Time: 10 minutes                           Total Cook Time (including rice cook time: about 90 minutes

What you need:

  • 1/2 cup brown rice, uncooked
  • 2 cups chicken broth, divided
  • 1 large onion, diced
  • 1/2 pound ground meat (or sausage or turkey)
  • 2 teaspoons garlic salt
  • 1/2 8 oz. can of tomato sauce
  • salt, pepper, cumin, and italian seasoning, to taste
  • 1/4 cup shredded cheese
  • 2 tablespoons sour cream, to top


  • Cook the rice in 1 cup chicken broth until done – you can cook ahead of time
  • Preheat the oven to 350*
  • Saute the onion in a large, oven-safe skillet over medium high heat until they begin to brown
  • Add the ground meat and garlic salt
  • Once the meat is cooked through, lower the heat to medium
  • Add rice, pasta sauce, seasonings, and cheese and bake until cheese is melted
  • Bake the mixture for 15 minutes
  • Top with sour cream
