Breakfast Quesadillas

Breakfast Quesadillas - Rebekah and her Ramblings.  A delicious and melty quesadilla stuffed with cheese and a scrambled egg!Are there many things better than breakfast tacos?  Or waffles?  Or bacon?  I love food, but I really love good breakfast food – probably because it’s rare for me to make a big breakfast.  I made a breakfast quesadilla for lunch the other day because I also love breakfast for lunch and dinner.  Breakfast should be eaten at any hour of the day and it should always be enjoyed.  This breakfast quesadilla is kind of like a breakfast taco, but is simpler and way quicker to whip up.  Feel free to spice it up anyway you want, I just liked the idea of something simple.  Gluten free :) (have you noticed that gluten free DOES NOT mean tastes bad??)

Breakfast Quesadillas
Breakfast Quesadillas - Rebekah and her Ramblings.  A delicious and melty quesadilla stuffed with cheese and a scrambled egg!Serves: 1               Total Cook Time: 10 minutes

What you need:

  • 1 egg
  • Lawry’s seasoning salt (seriously, just buy it already)
  • 2 corn tortillas (for gluten free and healthy option)
  • 2 tablespoons shredded cheese  (I used 2% milk Mexican blend), divided
  • salsa, for dipping

  • In a small bowl, crack an egg, beat it a little and then season generously with Lawry’s seasoning salt – beat until well combined
  • Scramble the egg in a medium sized skillet over medium heat – don’t break the egg up too much as you cook it, you still want nice big chunky pieces
  • Remove the egg from the skillet once cooked
  • Place 1 tortilla in the skillet and top with 1 tablespoon of cheese – spread the cheese evenly and cook over medium heat until the cheese starts to melt
  • Spread the scrambled egg over the still melting cheese and top with 1 tablespoon of cheese and the second tortilla
  • Continue to cook the quesadilla for about 30 seconds (or everything is starting to combine all melty-like) before flipping
  • Once the quesadilla is browned to your liking, remove from heat and dip in salsa to enjoy!
