Oatmeal M&M Cookies

Oatmeal M&M Cookies - Rebekah and her Ramblings. A chewy and chunky cookie perfect for a crowd!So normally I try write something funny or anecdotal or clever before I launch into the recipe.  Today, I got nothing.  So I’ll just get straight to the recipe.  I have some cookies today that are kind of like oatmeal chocolate chip cookies (an underrated cookie), but use M&M’s instead of chocolate chips, which are kind of the same thing.  I bought the M&M’s on clearance after Easter so they are the pretty pastel colors.  I’m sure these cookies would be delicious regardless of the M&M color :)

Oatmeal M&M Cookies

Prep Time: 20 minutes            Cook Time: 10-12 minutes

What you need:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup brown sugar
  • 1 cup sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1.5 cups oats
  • 2 cups M&M’s (milk chocolate)

Directions:

  • Preheat oven to 350* and line a cookie sheet with parchment paper
  • In a large bowl, beat the butter, brown sugar, and sugar together until combined and creamy
  • Add the eggs and vanilla, beat until combined
  • Add the flour, baking soda, baking powder, and salt into the bowl and mix until it fully comes together
  • Fold the oats into the dough, beating with your mixer, stir the M&M’s into the dough
  • Take tablespoon sized amounts of dough and form a mound – bake for 10-12 minutes
  • Let the cookies sit for about 2 minutes outside the oven before removing the cookies to a cooling rack
