YEA IT’S ME OKAY.  Lately I have forgotten I even have a blog cuz like life and stuff.  And also, I haven’t been cooking as much as I’d like (sad face) partially because I work in an office by myself with no one to bake for, partially because I have been on a diet and I’m eating boring food, and partially because my life is busy OKAY.  But the recipe I have is perfect if you’re busy and trying to eat healthy (but still wanna indulge a little…) cuz broccoli is healthy and stuff.  I’m a BIG FAN of roasted broccoli and if you read the blog with any regularity, you know that I am cheese’s #1 fan so basically this recipe brings those two fly mama jamma’s together.  And it’s supes easy to make so like get going already kthanks

Roasted Parmesan Broccoli
Serves: 4
Prep Time: 10 minutes         Cook Time: 20 minutes

Roasted Parmesan Broccoli - Rebekah and her Ramblings.  A healthy side kicked up with a little cheese!What you need:

  • 6 cups broccoli florets
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese (I used fat free), divided
  • salt and pepper, to taste

Directions:

  • Preheat the oven to 400* and line 2 baking sheets with parchment paper
  • Place the broccoli in a large bowl
  • Pour the olive oil, garlic, and 1/4 cup cheese over the broccoli and stir
  • Season with salt and pepper and stir again
  • Spread the broccoli evenly on the cookie sheets and cook for about 10 minutes
  • After 10 minutes, give the pans a shake and cook for about 8-10 more minutes or the broccoli begins to brown
  • Sprinkle with the remaining cheese and let sit for about 5 minutes before serving

Cheesy Ranch Chicken

Cheesy Ranch Chicken - Rebekah and her Ramblings. Juicy chicken breasts marinated in ranch dressing and coated with cheese and crispy bread crumbs!On Monday, it absolutely poured. It got super super dark and I took a nap because it was SO DARK. My parking lot was flooded and I saw a cat swim across the flowing river that was my driveway. Then when the rain stopped, the sky turned yellow and then this weird shade of red and then this super crazy orange color. The weather has been super weird for about a month now and it makes me want to stay in and eat a lot delicious comfort food. Cheese is kind of the ultimate comfort food to me. When you put cheese on anything, it gets a million times better.  I made some really good cheesy ranch chicken to cope with the rain and weather. It is very very good and creamy, but gooey and cheesy. My mouth is watering thinking about it!

Cheesy Ranch Chicken

Serves:3
Prep Time: At least 3 hours        Cooking Time: 22-25 minutes, depending on chicken size

Cheesy Ranch Chicken - Rebekah and her Ramblings. Juicy chicken breasts marinated in ranch dressing and coated with cheese and crispy bread crumbs!What you need:

  • 3 large chicken breasts
  • 1/2 cup ranch dressing
  • 1 cup your favorite bread crumbs
  • 1/3 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Lawry’s seasoning salt
  • 1/4 teaspoon of pepper

Directions:

  • Pound chicken breast to even thickness
  • Combine chicken and ranch in a large bag and mix until the chicken is well coated
  • Preheat oven to 425
  • Refrigerate for at least three hours and as long as overnight

  • Coat the chicken breasts with the bread crumb mixture on both sides
  • Line a baking sheet with foil and spray with cooking spray
  • Place the chicken on the baking sheet and bake for at least 22 minutes, or the chicken is cooked all the way through. This will obviously vary based on the size of your chicken

Sbisa Potatoes

Sbisa Potatoes - Rebekah and her RamblingsAt A&M, we have a dining hall that is famous for its cookies and the regret you feel for the amount of calories you eat while you are there. Cheesy breadsticks AND fried chicken? YES. Waffles with a layer of whipped cream on top AND a cinnamon roll the size of your face? YES. Chinese food and Mexican food? YES YES YES. Basically, you feel bad, but you don’t feel that bad because you are full and happy. This wonderful land is called Sbisa and they make some incredible potatoes. I found a recipe similar to these potatoes and have been dying to try them for ages. I finally finished off my potatoes tonight with this tasty recipe that will have you begging for more.

Sbisa Potatoes

Prep Time: 5 minutes      Cook Time: 20-24 minutes

What you need:

  • 4 small red cooking potatoes, thinly sliced
  • 1 tablespoon of olive oil
  • 1 teaspoon of Italian seasoning
  • salt, to taste
  • 2 teaspoons of Parmesan cheese

Directions:

  • Preheat oven to 450
  • Sbisa Potatoes - Rebekah and her RamblingsPlace potatoes, olive oil, Italian seasoning, and salt in a ziploc bag and gently shake until the potatoes are coated
  • Place potatoes on a foil lined baking sheet in a single layer
  • Bake potatoes for 15-17 minutes
  • Remove potatoes and sprinkle cheese on top. Cook for another 5-7 minutes, or potatoes are cooked all the way through
