Frozen Margarita Bars - Rebekah and her RamblingsSummer is basically here which means the heat is really here which means I am always searching for a cool dessert. Ice cream usually does the trick, but when you want to mix it up, I have the perfect recipe for you! These went to my stressed out finals bros and one of them had his portion eaten before I could even finish dishing out all of his other treats! I think that constitutes as a dessert well received.

Frozen Margarita Bars

Yield: about 24 bars     Total Time: about 4 hours

Frozen Margarita Bars - Rebekah and her RamblingsWhat you need:

  • 15 graham crackers, finely crushed
  • 1 stick of unsalted butter, melted
  • 1/2 cup of sugar
  • 8 oz container of Cool Whip (I used lite)
  • about 6 oz of margarita concentrate
  • 14 oz of sweetened condensed milk

Directions:

  • Preheat the oven to 350 and spray and 13 x 9 baking sheet with cooking spray
  • Gently stir the graham crackers, butter, and sugar together with a spoon
  • Spread the graham cracker crust into the bottom of the pan
  • Cook the graham crackers for 8-10 minutes, let them cool completely, about 20 minutes
  • Mix the cool whip, concentrate, and sweetened condensed milk together in a large bowl with a hand mixer
  • Spread the margarita mixture onto the crust
  • Cover the bars and freeze for at least 3.5 hours. These bars will get runny the warmer they get so keep them cold
